Ever since my vacation in Jamaica a few years ago I am a huge mojito fan..  I was always a little intimidated to make them, but they are actually super easy.  I use stevia instead of sugar for a skinnier version (so the only calories are from the rum and the little bit of lime).  Here's my simple recipe:

For 2 mojitos:
a lime, handful of mint, stevia, white rum, ice, seltzer

1. Take 1 lime and cut into wedges, place half in each glass.
2. Put mint in each glass (it's up to you how minty you like your drinks)
3. Put 1/2 tsp of stevia in each glass
4. muddle everything together
5. place a shot (or however much you like) in each glass
6. fill the glassed with ice
7. fill the rest of the glass up with seltzer water

this is my fave summer drink! and a fun version of it i recently discovered is strawberry basil! :)
