It all began with this delicious smelling loaf of bread...
I just had to make soup to go with it!  I swear, next recipe will not be soup!  I made up this recipe with 2 goals in mind: 1. Use up some ingredients in the fridge, 2. Make it as colorful as possible.

Servings:  1 ginormous bowl for me and 4 normal size bowls for others (so approx. 8 servings).


3 medium red potatoes, skin on, chopped
1.5 cups carrots, chopped
1 cup celery, chopped
2-32 ounce containers low sodium chicken broth
2 medium red bell peppers, chopped
2 cups shredded chicken (I pulled apart a roaster, it was easier)
1-15.5 ounce can black beans, rinsed and drained
1.5 cups corn (I used frozen)
3 scallions, chopped
1/4 cup fresh cilantro, chopped
1-3 chipotle peppers in adobo sauce (depending on how spicy you like it), finely chopped
1. Place potatoes, carrots, celery, and broth in a pot and bring to a boil.  Reduce heat and simmer until potatoes are cooked through, approximately 10 minutes.
2. Add the rest of the ingredients to the pot and let simmer for about 20 minutes to let all the flavors come out.
3. Serve with some delicious bread. 

I know, I know, I am Giada de Laurentiis herself.  But, don't knock it til you try it.  It was delicious!  And when we sat down for dinner, the manfriend said "what a colorful dinner".  That was one of the goals after all!  And he liked it so much he had seconds.  Score!

Popped over from Emily's blog, and I must say this looks delicious for fall. I love bread and soup dinners when it gets cold out! I also should buy stock in Michael's/AC Moore, I'm pretty sure I had a weekly habit when I was wedding crafting! Cute blog!
